Almond Spritz Cookies

At this time of year I start baking Christmas cookies and I often make Almond Spritz Cookies. These cookies are bite sized and flavourful. They are perfect when you want a small sweet treat. Enjoy with hot cocoa or eggnog.

INGREDIENTS

1 cup softened butter + 1 tbsp

¾ cup sugar

1 egg

½ tsp vanilla

1 tsp almond extract

¼ tsp salt

2 ¼ cups flour

Home made bread pudding

Once a week we get a grocery box from local vendors. Quite often it includes fresh artisanal bread. While great by itself the bread makes fantastic bread pudding.

INGREDIENTS

1 loaf artisanal bread. Your choice of flavour. cube.

1/2 cup whole cranberries

1 cup sliced apple

2 cups heavy cream

1 tsp cinnamon

1/4 tsp nutmeg

1/2 cup granulated sugar

4 beaten eggs

Fresh Tomatillo Salsa

Fresh tomatillo salsa is great on corn chips, baked potatoes or other vegetables. It whips up in less than 20 minutes and is better than the store bought versions. Adjust the sugar to the level of acidity you prefer.

INGREDIENTS

4 peeled and washed tomatillos

Tomatillo Salsa

2 cloves crushed garlic

600 grams fresh tomatoes chopped

3/4 cup basil chopped basil leaves

1/4 tsp salt

2 tbsp lime

sugar to taste ( 1 tbsp to begin)

RaspBerry Almond Swirl Cookies

When November rolls around I start baking cookies to put in the freezer for Christmas. Raspberry Almond Swirl Cookies freeze well and are delicious. They’re pretty on a Christmas platter or tasty just for tea time. For a different flavour cranberry jam or marmalade can be substituted for the raspberry.
