Cranberry orange loaf is a easy to make festive treat to have around the holidays. Filled with fresh cranberries and orange zest it is fresh and fruity. Try pairing the loaf with your favourite tea or eggnog.
2 cups flour
2 tbsp baking powder
1/2 tsp baking soda
1 tsp salt
1 cup sugar
3/4 cup orange juice
2 tbsp orange zest
1 beaten egg
2 tbsp melted butter
1 cup cranberries
1/2 cup shelled pumpkin seeds
Mix dry ingredients in a bowl until well incorporated.
Combine rind, juice, egg, butter, cranberries and pumpkin seeds together.
Add dry ingredients to wet ingredients and fold just until the mixture is clear of flour.
Pour mixture into a well greased loaf pan or well greased mini loaf pans.
Bake at 350 degrees Fahrenheit for 50 minutes for the loaf or 30 minutes for mini loaves or until a toothpick comes out clean from the mixture when inserted into the cake.
