Almond toffee is perfect for anyone with a sweet tooth. It’s easy to make, has a satisfying crunch, and is perfect as a homemade gift to those you love. Try substituting the nuts with cashews or pumpkin seeds for a different flavour.
INGREDIENTS
1/2 cup butter

1 1/3 cups sugar
1 tbsp corn syrup
3 tbsp of water
1 tsp vanilla
1/8 tsp baking soda
almonds
sea salt
DIRECTIONS
Line a cookie sheet with parchment.

Add sugar, butter corn syrup and water to a large heavy pot. Ensure the pot is large enough as eventually when you add the baking soda the mixture will foam up.
Heat over medium heat. Stir until sugar is dissolved.
Cook without stirring until a candy thermometer reaches 300 degrees Fahrenheit (the hard crack stage for candy).
Stir in the vanilla and baking soda. Be careful as the mixture will foam up.
Pour onto prepared cookie sheet. Top with sliced almonds. Drop sea salt sparingly onto toffee.
Cool and break apart.
