This is the first in a series of two recipes for coconut macaroons. The cookie is sweet with a tropical flair. It is filled with tasty coconut and the goodness of vanilla. For a special treat drizzle the finished cookie with chocolate or butterscotch.
2/3 cup flour
1/2 cup sugar
1/2 tsp salt
3 cups sweetened coconut
2 egg whites
1 1/2 tsp vanilla
food colouring (optional)
Mix flour, sugar, coconut and salt together until well combined.
In a separate bowl beat egg and egg whites lightly. Stir in vanilla. Add gel food colouring if desired and mixed until incorporated.
Add flour mixture to wet mixture and stir in until well blended.
Using a small teaspoon or cookie scoop drop rounded spoonfuls onto a cookie sheet lined with parchment or a silicone mat.
Top with sprinkles if desired.
Bake in a 325 Fahrenheit oven for 20 minutes or until the edges are lightly brown.
