Freezer Shortbread

Freezer shortbread are easy to make and delicious.  They crisp texture goes well with tea and coffee.

I make several batches of this recipe at Christmas and they are always the first to disappear. 

Enjoy with hot cocoa or your favourite latte.


1 3/4 cups flour

Freezer Shortbread

1/4 cup cornstarch

1/4 tsp salt

1 cup butter

1/3 cup icing sugar

1 tsp vanilla


Mix dry ingredients in a large bowl.

Mix wet ingredients together until well blended.

Add dry ingredients to wet ingredients and mix just until incorporated.

Turn mixture out onto parchment paper and form into a log.  Freeze for at least 1 hour.

Slice into pieces and space evenly on a cookie sheet.

Bake in a 325 degree Fahrenheit oven for 15 to 20 minutes or until the bottoms of the cookies are golden.

Serve with Cranberry Iced Tea
