My favourite apples are Spies. I like them in pies, crisp and just on their own. Occasionally, when I want to sweeten up the fruit I make this recipe of baked apples. Their sweet but tangy at the same time. Serve with coconut cream or whipped cream for an extra special treat.
INGREDIENTS
2 spy apples
1/4 cup walnuts
1/2 tsp cinnamon
1/4 tsp nutmeg
1/8 tsp ginger
2 1/2 tsp honey or brown sugar
DIRECTIONS
Cut off the top of the apples. Core them using a spoon making sure you leave the bottom of the apples intact.
Mix walnuts, honey, cinnamon, nutmeg, and ginger together until well combined.
Split the mixture into two and place in the apples.
Put apples in a glass pan and bake at 375 degrees Fahrenheit for 45 minutes.
