Pecan Banana Bread

At the end of the week there always seems to be one or two bananas that need to be used. A great way to use them is in Pecan Banana bread. It’s sweet and crunchy and can be eaten for breakfast or a sweet treat. Spread with your favourite fruit jam for added flavour.



1 cup mashed bananas

1/2 cup melted vegan margarine

1/4 cup sugar

1 flax egg

1 tsp vanilla

1 1/2 cups flour

1 tsp baking powder

1 tsp baking soda

1/2 cup chopped pecans


Mix bananas, melted butter, sugar and flax egg together.

In a separate bowl combine flour soda and baking powder.

Mix dry ingredients into wet until just incorporated.

Fold in pecans.

Bake at 350 degrees Fahrenheit for 45 minutes or until a skewer comes out of the cake clean.
