Chocolate raspberry hand pies are a different take on the hand pie. Chocolate pie dough encapsulates a sweet raspberry filling for a decadent treat. They’re great to take for a mid afternoon snack or a small dessert.
1/2 lb of vegetable shortening
1/2 tsp salt
2 cups flour
1/2 cup cocoa
1 tbsp white vinegar
Beat one egg in a measuring cup and add 1 tbsp white vinegar. Fill with cold water to 1/2 cup.
Blend flour, vegetable shortening and salt.
Gradually add liquid to dry ingredients and blend until well incorporated.
Wrap and chill in refrigerator until cool.
While the dough is cooling make the raspberry filling (recipe below).
2 cups raspberries
1 cup orange juice
4 tbsp cornstarch mixed in 2 tbsp of orange juice.
Stevia to taste
In large pan heat the above mixture until it thickens enough to use as a filling for the pies. Remove from stove and cool.
Remove the dough from the refrigerator and cut in rectangles. Allow two rectangles for each hand pie.
Place the rectangles on a silicone lined cookie sheet. Dollop raspberry filling in the centre of the rectangles.
Place second rectangle over first encapsulating the filling. Crimp the edges. Cut a slit in the top of the hand pie to allow the steam to escape.
Bake at 400 degrees Fahrenheit for 15 to 18 minutes. Cool slightly before serving.
