Lemon Easter Cookies

Lemon Easter cookies are a lemon sugar cookie decorated for the Easter holiday. Choose your favourite colour for the cookie dough.



2 cups flour

1 tsp baking powder

1 tsp salt

3/4 cup butter

1 egg

1 tsp lemon extract

1 tbsp lemon juice

3/4 cup sugar

gel food colouring – your choice of colour


Blend flour, salt and baking powder together.

Blend egg, sugar, extract, and juice and a dab of gel colouring together until light and fluffy.

Mix dry ingredients into wet ingredients just until combined.

Chill overnight.

Roll in balls and place on a cookie sheet. Press down with a glass.

Put a candy Easter egg into the centre of the cookie.

Bake at 350 degrees Fahrenheit for 7 to 9 minutes.
