Apple Crumble Muffins

Apple crumble muffins are tart and sweet at the same time. They have the best ingredients of the old fashioned apple crumble assembled in a muffin that can be taken anywhere. Enjoy with milk, coffee or tea.


1/4 cup packed brown sugar

1/8 cup flour

1/8 cup butter

3/4 tsp cinnamon


1 1/2 cups flour

1 tbsp baking powder

1 tsp salt

1/2 cup sugar

1 large egg

2/3 cup almond milk

1/4 cup safflower oil

3/4 cup grated Granny Smith apples


Mix topping ingredients together in a bowl until the mixture is crumbly. Set aside.

Mix flour, baking powder and salt together in another bowl until well combined.

In another bowl mix egg, almond milk, oil and sugar together until well blended. Fold in apples.

Add dry ingredients to wet and mix just until incorporated.

Fill muffin tin with batter. Top with crumble topping.

Bake at 400 degrees Fahrenheit for 16 to 20 minutes or until a toothpick inserted in the muffin comes out clean.

Cool before serving.
