Ginger Cookies on plate

GINGER COOKIES

Ginger cookies are sweet and moist. The combination of molasses, banana and ginger melts in your mouth. Try serving the cookies with hot tea or a strong cup of coffee.

INGREDIENTS
Ginger Cookies

1/2 cup sugar

1/2 cup melted coconut oil

1/3 cup molasses

1/4 cup mashed banana

2 flax eggs

3 tsp baking powder

1 1/4 cups flour

3 tsp ginger

DIRECTIONS

Mix coconut oil, sugar apple sauce and flax eggs in a bowl just until incorporated.

Mix flour, baking powder and ginger together until well mixed.

Fold flour mixture into wet mixture.

Put mixture into the refrigerator for 1 hour.

Scoop with a cookie scoop onto a silicone mat lined cookie sheet.

Bake in a 350 degree Fahrenheit oven for approximately 15 minutes.

Serve cold and store in a refrigerator.
