Veggie Chili

Veggie chili is a flavourful treat on those days where it is dark and overcast. The fragrant spices are warm and inviting. Try with Rosemary Parmesan Bread Machine Buns


2 tbsp olive oil

1 green pepper, diced

1 onion, diced

4 garlic cloves, minced

1 can kidney beans

1 can black beans

1 can chick peas

1 cup mushroom broth

1 can tomatoes

1 tsp salt

1 tbsp chili powder

1 tsp cumin

1 tbsp tomato paste


In a large pot saute pepper, and onion in olive oil until tender.

Add garlic and saute just until heated.

Drain cans and add beans and chick peas to the pot. Stir in tomatoes, tomato paste and mushroom broth.

Stir in spices and heat until bubbling.

Heat for at least 1/2 an hour on medium/low heat to blend flavours.
