Old Fashioned Bagels

Old fashioned bagels take some time to make but they’re worth the effort. They’re light and chewy and they’re wonderful with jam or your favourite buttery spread. Make a double batch and freeze some for when you need a quick snack.

1 tsp sugar

3/4 cup warm water

7 1/2 tsp regular yeast

Dissolve sugar in water in a large bowl. Place yeast on top of the water and let stand for 10 minutes. Stir.

2 eggs

2 tbsp oil

2 1/4 cups flour

1 tbsp sugar

2 tsp salt

Pecan Banana Bread

At the end of the week there always seems to be one or two bananas that need to be used. A great way to use them is in Pecan Banana bread. It’s sweet and crunchy and can be eaten for breakfast or a sweet treat. Spread with your favourite fruit jam for added flavour.

1 cup mashed bananas

1/2 cup melted vegan margarine

1/4 cup sugar

1 flax egg

1 tsp vanilla

1 1/2 cups flour

1 tsp baking powder

1 tsp baking soda

1/2 cup chopped pecans

Home made bread pudding

Once a week we get a grocery box from local vendors. Quite often it includes fresh artisanal bread. While great by itself the bread makes fantastic bread pudding.

INGREDIENTS

1 loaf artisanal bread. Your choice of flavour. cube.

1/2 cup whole cranberries

1 cup sliced apple

2 cups heavy cream

1 tsp cinnamon

1/4 tsp nutmeg

1/2 cup granulated sugar

4 beaten eggs

Easy Banana bread

Easy banana bread has many uses. Sliced with peanut butter and a few banana slices it makes a great breakfast. Use in bread pudding or toast cubes to make croutons for fruit salad. Don’t forget to have a slice on its own. It’s delicious!

INGREDIENTS

1/4 cup safflower oil

3/4 cup sugar

1 beaten egg

1 medium mashed ripe banana

3 tbsp almond milk

2 cups flour

1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/4 cup chopped walnuts.

DIRECTIONS

Rosemary Parmesan Bread Machine Buns

Bread is always best baked at home especially when special flavours are used.  Rosemary Parmesan Bread Machine Buns are great by themselves or excellent alongside a salad.  Serve warm with melted butter.

INGREDIENTS

1 1/3 cups milk

1 1/2 tsp salt

2 tbsp sugarPARMESAN ROSEMARY BREAD MACHINE BUNS

2 tbsp butter

1 tsp ground garlic

3 1/4 cups flour

1 1/4 tsp bread machine yeast.

1/2 cup grated Parmesan

1/4 cup chopped rosemary

DIRECTIONS

Add all ingredients except Parmesan and rosemary to the bread machine pan.  Work on dough cycle.  At indicator add Parmesan and rosemary.

Remove dough from pan and let rise for 15 minutes.

Cut dough into 12 pieces and form into long logs.  Twist logs to make knots.

Let rise in a warm place for 45 minutes.

Bathe the tops of the buns with a mixture of butter and garlic.  Bake at 375 degrees Fahrenheit for approximately 20 minutes.

Carrot Bread

Carrot Bread is great on an Easter platter.  It’s sweet and filling and easy to make.  Serve with lemon icing or a traditional cream cheese icing.

Bread Machine Rosemary Bread

On rainy days I sometimes pull out the bread machine and experiment.  Bread Machine  Rosemary Bread is a recipe I particularly like.  The bread is fresh and fragrant and bits of sun-dried tomato add for a pop of freshness.  This recipe is great served with cream cheese or just plain butter.

INGREDIENTS

1 1/4 cups concentrated vegetable stockBread Machine Rosemary Bread

1 tbsp sugar

1 tbsp olive oil

1/2 cup diced sun-dried tomatoes (removed from the oil)

3 tbsp dried rosemary

1 1/4 tsp bread machine yeast

Measure ingredients in pan in order they are listed.  Bake on 1.5 lb setting on regular cycle.

Bread Pudding

Bread pudding is sweet and filling.  The brown sugar makes a delectable sauce.  Serve with ice cream or whipped cream.
