Pumpkin Spice Cake

This recipe uses canned pumpkin and a mixture of fragrant spices.  It’s good served with cream cheese icing.

Ingredients

1 cup pumpkin

Grandma Hilda’s Banana Cake

I love the smell of banana bread baking in the kitchen.  My grandmother came up with the recipe and used to make this bread quite often when I was a child.

The tangy buttermilk in the batter of this cake adds a rich flavor.  Fold in raisins or chocolate chips for a change.

Ingredients

Yule Log

This show piece for your Christmas table takes some time to make but the recipe isn’t hard.  Use your imagination to decorate the tree stump.  You can be traditional and make it look like a tree or you can be more abstract as in my example.  Either way the chocolate icing against the light and airy cake is delicious.

Applesauce Cake

This is my grandmother’s recipe. She used to use chunky home-made applesauce to bake the recipe with.  I’ve made my own applesauce and used store bought sauce in this cake.  It’s delicious either way.

3/4 cup sugar

Chocolate Cinnamon Zucchini Cake

Light and delicious, this cake is full of rich chocolate flavor.  Zucchini adds a moist texture and chocolate chips add an extra burst of chocolate.  This cake is a treat that will disappear in a flash.

Summer Raspberry Brownie Squares

Raspberries are my favorite fruit.  I use them in fruit salads, smoothies and these brownie squares.  Something like a Blondie, these squares will become one of your favorite desserts.
