Marshmallow Squares

Marshmallow squares are crazy easy to make and are delicious.  They’re sweet and delicious and anyone with a sweet tooth will love them.  Store in the refrigerator for an indulgent treat any time of day.

INGREDIENTS

Chocolate Shortbread

2 cups flourChocolateShortbread

2 tbsp cocoa powder

3/4 cup softened butter

3/4 cup icing sugar

1/3 cup brown sugar

1 tsp vanilla

Mix butter, sugars and vanilla in a bowl until fluffy.  Add flour and cocoa powder.  Roll into a log and refrigerate until butter hardens.  Cut slices from log and bake in 325 degree oven for 20 to 30 minutes.

Chocolate Brownies

There’s nothing like an ooey gooey chocolatey brownie.  These brownies come together in minutes and disappear even quicker.

Ingredients

Chocolate Carrot Cake

A twist on the traditional carrot cake this cake is excellent served with cream cheese icing.

Ingredients

2 cups flour

Chocolate Peanut Butter Clusters

This no-bake cookie has the classic flavors of chocolate and peanut butter.  You only need one of these cookies to satisfy your sweet tooth as the cookies are delightfully sweet.

Ingredients

1/2 cup brown sugar

Chocolate Peanut Butter Clusters1/2 cup corn syrup

1 cup creamy peanut butter

3 cups corn cereal (The flaked kind)

5 squares of baking chocolate melted (I like dark chocolate)

Mix ingredients together in a large bowl until thoroughly combined.  Line a cookie tray with parchment paper and drop mixture by spoonfuls onto parchment.  Chill.  Serve cool.

Cranberry White Chocolate Shortbread

Christmas is the one time of year that my family always baked several kinds of cookies for guests over the holiday season.  Times have changed and we no longer need the selection of sweets we used to but I find myself still baking some of my holiday favorites.

This is probably my most favorite cookie.  The tangy cranberries, aromatic almonds and white chocolate create a sumptuous cookie. 

I’ve tried replacing the white chocolate in this recipe with milk chocolate but the recipe is not the same.   If you absolutely hate white chocolate replace it with dark chocolate.  The bitter chocolate pares well with the cranberries.

Chocolate Ice Box Cookies

This recipe is similar to the recipe for Peanut Ice Box Cookies.  The dough can be kept in the refrigerator until you are ready to bake the cookies.  Rich and moist this dough is super chocolatey.  Add it to your lunch box for an afternoon treat.

1 cup melted butter

Use mint chocolate chips as a variation.

2/3 cup brown sugar

1/2 cup light corn syrup

1 beaten egg

1/2 tsp vanilla

Mix together in a large bowl.  In a separate bowl mix together the dry ingredients below.

Simple Chocolate Brownies

This is my mother’s recipe.  I have memories of coming home from school and smelling these brownies through the window at all times of the year.  

The chocolate combined with nuts is delicious yet the recipe is simple enough to make on a busy day.

INGREDIENTS

2 baking squares of chocolate *Simple Chocolate Brownies

1/2 cup butter

1 cup sugar

1 tsp  vanilla

2/3 cup flour

2 eggs

1/3 cup chopped nuts

  • 1 square of baking chocolate equals 1 tbsp of butter and 3 tbsp of cocoa.
