Easy Trifle

Layer this recipe in a clear bowl so that you can see the layers. The jam and gelatin powder can be adjusted to your favorite flavors.

Ingredients

1 box of French Vanilla cake mix

The vanilla cake can be changed for Angel Food Cake.

2 boxes raspberry jello powder

1 jar raspberry jam

1 can custard powder

whipped cream

1 tbsp sugar

Mix cake mix according to instructions on the box.  Bake in a parchment lined rectangular pan according to manufacturer’s instructions. Remove from oven and cool before proceeding with recipe. Continue reading Easy Trifle

Cranberry Tarts

Tart and tangy these mini tarts are perfect for Thanksgiving or Christmas.  The tarts make a colorful addition to any party platter.

The tarts store in the refrigerator for several weeks and freeze well.

Ingredients

3 cups flour

1 tsp salt

1/2 lb vegetable shortening

1 egg

milk

Mix flour, salt and vegetable shortening until crumbly.  To a measuring cup add 1 egg and enough milk to make 1/2 cup.  Pour wet mixture into flour mixture and combine.  Chill for at least an hour.

Cranberry Mixture

3/4 cup cranberries

1/4 cup raisins

1/4 cup sugar

1/2 tbsp flour

dash salt

1/3 cup hot water.

Combine above in blender until mixture is smooth.  Pour into prepared tart shells using the pastry recipe above.  Bake in a 400 degree Fahrenheit oven for 20 minutes.

Gumdrop Cookies

This is an old fashioned cookie that has gumdrops folded into the batter.  The cookies are soft with pieces of chewy candy.  Store in a cookie tin wrapped in parchment. 

Ingredients

1/2 cup soft butter

1/2 cup brown sugar

1/2 cup sugar

1 beaten egg

1 tsp vanilla

Cream above ingredients.  In a separate bowl mix the following ingredients.

1 cup flour

1/2 tsp baking soda

1/2 tsp baking powser

Patterned Cookies

This recipe takes more time than many of the icebox cookies but the results are worth the effort. The designs are pretty and the cookie is delicious.  You’ll need an afternoon to bake these cookies so make an extra batch while you are baking and freeze  any leftovers.

Ingredients

1 cup soft butter

The white dough can be tinted green for Christmas, pink for Easter, orange for Halloween, etc.

2/3 cup sugar

1 tsp vanilla

1/4 tsp salt

2 1/2 cups flour

1/4 cup cocoa powder

Mix first 3 ingredients until light and fluffy.  Add flour and salt to the mixture.  Blend until combined.  Do not overwork dough. Continue reading Patterned Cookies

Chunky Cranberry Applesauce

This applesauce is good with pork or on its own.   Its adds a unique flavor to baking when substituted for eggs or oil.  Replace 1 egg with 1/4 cup of applesauce or replace 1/4 of the oil in a recipe with applesauce.

Ingredients

8 cups chopped mixed apples

4 cups apple juice or apple cider

1 cup sugar

2 tsp cinnamon

1 tsp nutmeg

1 tsp allspice

Stir ingredients in a large pot over high heat just until mixture begins to boil.  Turn down and simmer until thickened and apples begin to breakdown.  Stir pot occasionally to prevent bottom from burning.

Mixed Fruit Cobbler

I like to put this recipe together when peaches are in season.  If I can’t find a particular type of berry when the peaches are ready, I simply substitute strawberries or blackberries. 

The fruit comes out of the oven piping hot so make sure you let the dessert rest five minutes before you serve it.

Ingredients

2 cups peaches, peeled and sliced

Frosty Strawberry Dessert

You can make this recipe from raspberries instead of strawberries.

A light dessert that is filled with strawberry flavor.  It’s great on hot summer days and the recipe is sure to please all members of the family.

1 cup sifted flour

1/4 cup brown sugar

1/2 cup walnuts

1/2 cup melted butter

Stir ingredients together and bake in a 350 degree oven for 20 minutes stirring occasionally to make crumble.  Make sure the pan is shallow. Remove from oven and sprinkle in a 13 x 9 x 2 inch pan. Set aside.

2 egg whites

1 cup sugar

2 cups sliced strawberries

2 tbsp lemon juice

Combine in a large bowl and beat at high speed until stiff peaks appear.  This will take about 10 minutes.

1 cup whipped whipping cream.

Fold in whipped cream to egg white mixture.  Spoon over crumbs.  Freeze for 6 hours and cut into squares.  Trim with strawberries.

Unbaked Cookie Squares

The basic syrup for these cookies is boiled on the stove and then stirred into the ingredients.  Once chilled this recipe makes a square something like a candy bar. 

1/2 cup brown sugar

Almost like candy these squares are particularly popular with people who have a sweet tooth.

1/2 cup corn syrup

Bring to a rolling boil.  Remove and add

1 cup peanut butter

3 cups corn flakes

Mix together and pour into a greased pan.  Melt a bag of chocolate chips in a double boiler or the microwave and pour chocolate over base.  Smooth until even and chill for at least an hour.

Applesauce Cake

This is my grandmother’s recipe. She used to use chunky home-made applesauce to bake the recipe with.  I’ve made my own applesauce and used store bought sauce in this cake.  It’s delicious either way.

3/4 cup sugar

Jam Crumble Squares

My favorite jam to use in these is a low sugar peach apricot blend.  The jam blends well with the soft texture of the square.

1 cup graham wafers
