Patchwork Peppermint Cookies

When Christmas rolls around I like to have a cookie tray filled with different cookies for my guests to enjoy. Although there will be few holiday visits this year I still wanted to have a few special cookies in the house for the family.

The recipe for patchwork peppermint cookies is a new cookie that I modified from the patterned cookie recipe. The cookies are sweet with a hint of peppermint and are colourful on any tray.

The recipe is a bit fussy and the assembly of the cookies takes a little longer than usual but it is worth the work. The cookies can be made in two and a half hours. This includes the time the batter rests in the refrigerator.

The recipe can be modified for different holidays. Change the colour of the food colour and add a different extract to make your holiday cookie special. For example, for a summer birthday use yellow food colouring in half the dough and add lemon extract. Yummy! Orange and red can be used for fall with maple extract.

Orange Raspberry Angel Cake

The orange raspberry angel cake is another recipe from my grandmother’s cookbook.  The cake is light and tender and delicious when served with the orange raspberry sauce I drizzled over top.  Serve extra sauce in a jug for those who love fresh fruit.

INGREDIENTS

10 – 11 egg whitesOrange Raspberry Angel Cake

1 tsp cream of tartar

1/4 tsp salt

1 1/4 cup fine sugar

1 tsp vanilla

1 cup cake flour.

 

Note: you can make extra fine sugar by whizzing granulated sugar in a food processor.

Strawberry Shortcake

Where I live strawberries are usually fresh in June.  It’s also the month of my mother’s birthday so we often have shortcake instead of birthday cake to celebrate. 

This shortcake recipe is sweet, light and fluffy yet it is still firm enough to take on a picnic.

IngredientsStrawberry Shortcake

4 cups flour

1 tsp baking soda

1 tsp salt

2 tbsp baking powder

2 cups milk + 2 tsp vinegar

1 cup sugar

1 cup vegetable shortening

In a bowl combine flour, baking soda, salt and baking powder.

Molasses Cupcakes

Molasses cupcakes are rich and sweet. They’re great for a mid morning snack or for a snack attack at night. Make an extra batch and freeze them for when you need a sweet treat.

INGREDIENTS

1/3 cup butter

Molasses Cupcka

1/2 cup sugar

1 egg

1/3 cup molasses

1/2 cup almond milk

1 1/4 cup flour

1/2 tsp salt

1/2 tsp baking soda

2 tsp cinnamon

1 tsp ginger

DIRECTIONS

Mix butter, sugar, eggs, molasses and milk together until well incorporated. 

Mix dry ingredients and fold in to wet just until blended. 

Spoon into greased cupcake tins.

Bake in a 350 degree Fahrenheit oven for 20 to 25 minutes or until a skewer inserted in a cupcake comes out clean.

Pumpkin Spice Cake

This recipe uses canned pumpkin and a mixture of fragrant spices.  It’s good served with cream cheese icing and is a festive addition to your fall table.

Orange Cake

Orange cake is made with orange juice.  The cake is light and fruity and delicious.  It’s good on its own or great with cream cheese icing.

INGREDIENTS

2 eggs

Orange Cake

1 cup melted butter

1 cup white sugar

3 tbsp orange juice

1/2 cup sour milk.

Mix wet ingredients in a bowl.  In a separate bowl mix the items below.

Orange Mayonnaise Cake

Orange mayonnaise cake is rich, chocolatey and moist. It’s great as a birthday cake or for a celebration cake. Try different kinds of mayonnaise and choose your favourite.

INGREDIENTS

Cake

2 cups flour

1 cup white sugar

1 1/2 tsp baking soda

1/2 tsp salt

1 1/2 tsp baking powder

4 tbsp cocoa

Mix together in a bowl until all ingredients are incorporated.

In a small bowl whisk together:

1 cup mayonnaise

1 cup orange juice

1 tsp orange extract

DIRECTIONS

Mix dry and wet ingredients together just until incorporated.

Bake in a glass pan at 325 degrees for 45 minutes or until a toothpick comes out clean from the batter. 

Cool and then cover with icing.

Peanut Butter Orange Icing

6 tbsp crunchy peanut butter

4 tbsp honey

4 tbsp corn syrup

1 tsp orange extract

Mix thoroughly and spread thinly on cake.  The icing is sweet. A little goes a long way.
