Lemon Loaf

Lemon loaf is a sweet cake drizzled in a tangy icing.  It’s easily frozen for when you have unexpected guests drop by.  Serve with your favourite tea or coffee.

2 well beaten eggs

1 tsp baking powder

1 cup sugar

1/2 cup milk

1 1/2 cups flour

Zesty Lemon Muffins

These muffins are tangy and refreshing.  They’re great with coffee or tea and light enough to be a mid-morning snack.

Ingredients

1/4 cup sugar

1 tsp salt

3 tsp baking powder

1/3 cup canola oil

1/4 cup almond milk

1 egg

1 cup frozen lemonade (thawed)

2 or 3 drops yellow food coloring

Mix dry ingredients.  In a separate bowl mix wet ingredients.  Fold wet ingredients into dry ingredients.  Bake in lined muffin tins at 375 degrees for 20 to 25 minutes.

Lemon Bars

2 cups flour

1/2 cup icing sugar

1/2 tsp salt

1 cup butter

Mix and place in bottom of buttered 9 x 13 inch pan.  Bake at 350 degrees for 15 minutes.  Let stand at room temperature for 5 minutes.

3 large beaten eggs

2 cups sugar

1/2 cup lemon juice

1/4 cup flour

1/2 tsp baking powder

Prepare filling and pour over base.  Return to the oven and bake at 350 degrees for 25 minutes.  sprinkle with icing sugar and cool.
