Cost Saving Pumpkin Spice Syrup

It’s Thanksgiving again in Canada and at this time of year pumpkin spice baked goods and drinks are found just about everywhere.

Pumpkin spice drinks can be costly but there is a simple solution. Cost effective pumpkin spice syrup is easy to make and when added to your drinks can give you the fall taste you love at a fraction of the cost.

It contains only 5 ingredients and can be stored for up to a week in the refrigerator. You can use fresh or canned pumpkin. Just make sure if you use the fresh version that the vegetable has been processed and is very smooth

Cost effective pumpkin spice syrup can also be used in baked goods. Try making a pumpkin muffin and infusing the centre with the filling after baking. You might have to thicken the recipe a bit more to do this.

You can use the syrup in many drinks. Try adding a tablespoon to your coffee or making a quick latte. I like heating almond or cashew milk and adding a tablespoon to the hot mixture.

If you like a stronger spice flavour simply add more of the syrup to your beverage.

For an amazing fall combination try serving your beverage with Apple Crumble Muffins or Pumpkin Pie.

Apple Crumble Muffins

Apple crumble muffins are tart and sweet at the same time. They have the best ingredients of the old fashioned apple crumble assembled in a muffin that can be taken anywhere. Enjoy with milk, coffee or tea.

CRUMBLE INGREDIENTS

1/4 cup packed brown sugar

apple crumble muffins

1/8 cup flour

1/8 cup butter

3/4 tsp cinnamon

MUFFIN INGREDIENTS

1 1/2 cups flour

1 tbsp baking powder

1 tsp salt

1/2 cup sugar

1 large egg

2/3 cup almond milk

1/4 cup safflower oil

3/4 cup grated Granny Smith apples

Old Fashioned Bagels

Old fashioned bagels take some time to make but they’re worth the effort. They’re light and chewy and they’re wonderful with jam or your favourite buttery spread. Make a double batch and freeze some for when you need a quick snack.

1 tsp sugar

3/4 cup warm water

7 1/2 tsp regular yeast

Dissolve sugar in water in a large bowl. Place yeast on top of the water and let stand for 10 minutes. Stir.

2 eggs

2 tbsp oil

2 1/4 cups flour

1 tbsp sugar

2 tsp salt

Pecan Banana Bread

At the end of the week there always seems to be one or two bananas that need to be used. A great way to use them is in Pecan Banana bread. It’s sweet and crunchy and can be eaten for breakfast or a sweet treat. Spread with your favourite fruit jam for added flavour.

Easy Banana bread

Easy banana bread has many uses. Sliced with peanut butter and a few banana slices it makes a great breakfast. Use in bread pudding or toast cubes to make croutons for fruit salad. Don’t forget to have a slice on its own. It’s delicious!

3/4 cup sugar

INGREDIENTS

1/8 cup Stevia

2 tbsp pumpkin puree

1 tsp pumpkin pie spice

1 tbsp maple juice

3/4 cup half and half cream

1/8 tsp salt

DIRECTIONS

Whip all ingredients together until frothy.

Serve in hot coffee.
