Chocolate Peppermint Candy

At this time of year it’s nice to have a sweet treat in the house to share with visitors.  One of my favourite sweet combinations is chocolate and peppermint.  Chocolate Peppermint candy combines these tastes in a melt in your mouth confection.  Enjoy!

INGREDIENTS

1 bag milk chocolate chipsChocolate Peppermint Candy

1 bag white chocolate chips

2 tsp vegetable oil

1 tsp peppermint extract

Peanut Butter Bites

On Christmas Eve my family celebrates with food and family.  One recipe which turns up again and again is the cookie peanut butter bites.  The chocolate and peanut butter are a great combination for celebrations or when you just want a decadent treat. Enjoy! 

INGREDIENTS

1 cup chunky peanut butterPeanut Butter Bites

3/4 cups icing sugar

1/2 cup white chocolate

1/2 cup milk chocolate

sprinkles

DIRECTIONS

Mix peanut butter and icing sugar together in a small bowl until mixture is well incorporated.

Line a cookie tray with a silicone mat.

Old Fashioned Apple Pie

I’ve never been a big fan of apple pie until I tried it with tangy spy apples.  The apples are just sour enough to cut the sweetness of the sugar and the fat of the crust.  The recipe would be just as good with granny smith apples.

INGREDIENTSApple Pie

PIE CRUST

5 cups flour

3 tbsp brown sugar

2 tsp salt

1 tsp baking powder

1 lb vegetable shortening

1 egg

2 tbsp apple cider vinegar

ice cold water to make 1 cup

FRUIT

1 cup sugar

2 tbsp flour

1 tsp cinnamon

5 cups Spy apples

DIRECTIONS

Crust

Mix flour, sugar, salt and baking powder in a large bowl.

Mix in vegetable shortening until mixture is crumbly.

Beat egg in measuring cup until frothy.  Add vinegar and water,

Mix together just until mixed.

Refrigerate for at least 1 hour.

When chilled roll out dough into two disks.  I like to do this between two sheets of parchment paper as it is easy to handle.

Line a pie plate with the first disk and trim edges.  Set aside.

Fruit

Combine sugar, cinnamon and flour.

Add apple and mix until well combined.

Pour into pie shell and top with second crust.  Scallop edges and vent the pie.

Bake at 350 degrees Fahrenheit for 45 minutes until apples are soft and crust is golden brown.

Hard Candy

Hard candy is made from an unusual combination of vinegar and sugar.  It’s a great addition to a Christmas gift basket or cookie tin.

INGREDIENTSHard Candy

2 cups sugar

1/4 cup water

1/2 cup vinegar

2 tbsp butter

10 drops green food colouring

DIRECTIONS

Place ingredients in a large saucepan and heat until sugar is dissolved in mixture.  Boil until a candy thermometer indicates the hard ball stage for sugar is reached (266 degrees Fahrenheit). Be careful the sugar will be very hot and can burn easily.

Pour into a greased and lined 8 inch pan.  Chill

Break into pieces and serve.

 

Tomato Jam

I always love the summer/fall season.  All kinds of fresh produce can be found in the stores and farmer’s markets.  Every year I scour the markets for sweet and juicy tomatoes.  I like to use them in salsas, salads, sandwiches and this tomato jam.  Sweet with a bit of a tang this jam is great served on bread or with cheese.

Ingredients

2 cups cherry tomatoesTomato Jam

2 cups Roma tomatoes

1/4 cup vinegar

1/4 cup water

1 tsp balsamic vinegar

1/4 cup sugar

1 tbsp molasses

1 tsp pepper

1 tsp salt

1 tsp ground basil

Directions

Place all ingredients in a saucepan.  Bring to a boil.  Lower heat and simmer for 1 1/2 hours to 2 hours until mixture thickens.

Can with your favourite canning method.

Good on Bread Machine Rosemary Bread.

 

Cranberry Sunflower Cookies

Cranberries are my favourite dried fruit.  I love them in granola, harvest loaves or cookies.  Cranberry Sunflower Cookies combine the fruit with crunchy sunflower seeds and sweet coconut.   Their great by themselves as a treat or taken on a picnic.

For a change try dried blueberries instead of cranberries.

INGREDIENTS

1 1/2 cups flourcranberry-sunflower-cookies

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp sat

3/4 cup butter or 3/4 cup vegan margarine

1 cup sugar

2 eggs or 2 flax eggs

1 1/2 tsp vanilla extract

2 cups rolled oats

1 cup dried cranberries

Old Fashioned Banana Muffins

Old fashioned banana muffins are great for using up the ripe fruit before it spoils.  The recipe is light, sweet and fluffy and is good with coffee or tea.  For a special treat try adding chocolate or butterscotch chips to the batter.

1/2 cup vegan margarineOld fashioned banana muffins

1 cup mashed bananas

1 1/2 cups flour

Rhubarb Pineapple Salsa

Rhubarb Pineapple Salsa is an unusual salsa that is good on ice cream.  Reduce the ginger if you don’t like spicy sauces.

Garlic and Chive Biscuits

Garlic and Chive Biscuits are fresh and fragrant.  Their great with soup, stews or as a treat on their own.

2 cups flour

Simple Carrot Soup

Carrots are a standby in my house for quick and easy meals.  Sometimes I find I have carrots that need to be used quickly.  Simple Carrot soup is a easy recipe for a light supper.  Serve with toast or garlic toast and you have a complete meal.
