There’s nothing better on a rainy day than to come home to freshly made buns. This recipe uses a similar bread dough to cinnamon buns but incorporates mashed bananas for a unique flavour.
2 medium mashed bananas
2 egg whites
1/4 cup milk
4 tbsp sugar
1/2 tsp salt
2 tbsp butter
1 1/2 cups flour
1/2 cup flax seed meal
2 tsp bread machine yeast
1/4 cup sliced almonds
Put ingredients except almonds and jam into the bread machine pan. Mix on dough cycle.
When the cycle is finished remove the dough from the bread machine and let rise covered for 15 minutes. Roll dough on a floured board into a rectangle. Spread with jam and almonds. Roll up in a log and slice into 10 pieces. Place in a buttered pan and let rise for 1 hour.
Bake at 350 degree Fahrenheit oven for 35 to 40 minutes. May be topped with plain icing.
I like to make smoothies in the morning, but I find at the end of the week there’s always leftover bananas. I use the fruit to make this moist cake. It takes wonderful and fills the house with a rich scent as it bakes.

1/3 cup brown sugar
1/3 cup white sugar
2 beaten eggs
Mix butter and sugar until creamy. Add eggs and beat well.
