Festive Carrot Cake

Carrot cake is a great dessert for festive occasions. The cake takes a bit of work but is sure to please even the most finicky person. For a change try Chocolate Carrot Cake.

Zingy Lemon Muffins

Lemon is one of my favourite flavours. Zingy lemon muffins are full of the taste and smell of lemon and citrus. They’re great for a treat any time of year and are especially good with strawberry jam. Try baking mini muffins for take a long treats.

INSTRUCTIONS

2 cups flour

1 cup sugar

2 tsp baking powder

1 tsp salt

1/2 cup melted butter

1 cup lemon juice

4 eggs

Orange Raspberry Angel Cake

The orange raspberry angel cake is another recipe from my grandmother’s cookbook.  The cake is light and tender and delicious when served with the orange raspberry sauce I drizzled over top.  Serve extra sauce in a jug for those who love fresh fruit.

INGREDIENTS

10 – 11 egg whitesOrange Raspberry Angel Cake

1 tsp cream of tartar

1/4 tsp salt

1 1/4 cup fine sugar

1 tsp vanilla

1 cup cake flour.

 

Note: you can make extra fine sugar by whizzing granulated sugar in a food processor.

Carrot Bread

Carrot Bread is great on an Easter platter.  It’s sweet and filling and easy to make.  Serve with lemon icing or a traditional cream cheese icing.

INGREDIENTS

1 cup grated carrot

1/2 cup oil

2 eggs (beaten)

1 tsp vanilla

1 1/2 cups flour

1 tsp baking powder

Olive Oil Cake

The olive oil in this cake gives a savoury note to the taste. Try experimenting with different quality olive oils to find the version you like the best.

Ingredients

2 cups flour

Olive Oil Cake1 tsp baking powder

1 tsp baking soda

1 tsp salt

1/2 cup olive oil

1/2 cup maple syrup

1/4 cup lemon juice

DIRECTIONS

Sift dry ingredients  into a bowl.

Mix wet ingredients into another bowl.

Fold dry ingredients into wet ingredients and mix until just combined.

Pour onto a parchment lined loaf pan and cook at 350 degrees Fahrenheit for 35-40 minutes.

Cool before serving.

Raspberry Swirl Coffee Cake

Serve this coffee cake to your guests and they’ll be impressed.  It takes wonderful and the swirls of raspberry brighten up the cake. 

If you don’t like raspberry try swirling in blueberry sauce instead.

Ingredients

1 beaten egg

Chocolate Carrot Cake

A twist on the traditional carrot cake this cake is excellent served with cream cheese icing.

Ingredients

2 cups flour

Chocolate Carrot Cake1 cup sugar

1/4 cup cocoa

2 tsp baking soda

1 tsp salt

1 tsp cinnamon

1 cup shredded coconut
