Cranberry Maple Bread Machine Buns

Cranberry Maple Bread Machine buns are easy to make and tasty.  Just throw the ingredients in your bread machine and follow a few simple steps and you have flavourful buns for your table.  Enjoy with coffee or tea.

INGREDIENTS

1 cup almond milk

1 egg or 1 vegan egg

1 tsp salt

1/4 cup maple syrup

1/4 cup melted butter or melted vegan butter

3 3/4 cups flour

1 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp nutmeg

1 1/4 tsp yeast (Bread machine or high activating)

1 cup dried cranberries

Cranberry Iced Tea

Cranberry Iced Tea is fresh and fruity. Ir’s a wonderful drink for hot days and is a fresh twist on normal iced tea. Serve with Blueberry Vanilla Cookies.

INGREDIENTS

1/2 cup sugar

Cranberry Iced Tea

1/2 cup water

1/8 tsp cloves

1/8 tsp nutmeg

1/8 tsp ginger

1/2 tsp cinnamon

Boil for 5 minutes

Add 2 cups cranberries

Cranberry orange loaf is a easy to make festive treat to have around the holidays. Filled with fresh cranberries and orange zest it is fresh and fruity. Try pairing the loaf with your favourite tea or eggnog.

INGREDIENTS

2 cups flour

2 tbsp baking powder

1/2 tsp baking soda

1 tsp salt

1 cup sugar

3/4 cup orange juice

2 tbsp orange zest

1 beaten egg

2 tbsp melted butter

Lemon Cranberry Muffins

There’s no reason to go to the local coffee shop for a muffin when you have this recipe.  This muffins have the classic paring of lemon and cranberries together.  They’re tangy yet sweet and are sure to tempt your taste buds.

INGREDIENTS

Cranberry Almond Shortbread

Dried cranberries add a fruity flavour to this shortbread recipe.  The combination of the fruit and the crunch of the almonds  blend well together and make an unforgettable cookie.

INGREDIENTSCranberry ALmond Shortbread

1 tsp vanilla

1/2 cup butter

1/2 cup icing sugar

1 1/4 cups flour

1/2 tsp salt

1/2 cup dried cranberries

1/2 cup chopped almonds

DIRECTIONS

Cream butter, icing sugar and vanilla together.

In a separate bowl mix flour, salt, cranberries and almonds.

Fold dry ingredients into wet until mixed well.  DO NOT OVER MIX.4

Spread cookie dough  on parchment and roll into logs.  I usually make two.  Chill for at least 1 hour.

Bake at 325 degrees Fahrenheit for 30 minutes or until slightly brown.

Cranberry Sunflower Cookies

Cranberries are my favourite dried fruit.  I love them in granola, harvest loaves or cookies.  Cranberry Sunflower Cookies combine the fruit with crunchy sunflower seeds and sweet coconut.   Their great by themselves as a treat or taken on a picnic.

For a change try dried blueberries instead of cranberries.

INGREDIENTS

1 1/2 cups flourcranberry-sunflower-cookies

1 1/2 tsp baking powder

1/2 tsp baking soda

1/2 tsp sat

3/4 cup butter or 3/4 cup vegan margarine

1 cup sugar

2 eggs or 2 flax eggs

1 1/2 tsp vanilla extract

2 cups rolled oats

1 cup dried cranberries

Citrus Cranberry Cookies

Citrus Cranberry Cookies are great for an afternoon snack.  The cranberries are chewy against the soft, moist texture of the lemon cookie.  Enjoy them with your favourite cold drink on a hot afternoon.

INGREDIENTS

3 cups flourCitrus Cranberry Cookies

2 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1 cup melted butter

1 cup sugar

2 eggs

1/4 cup lime or lemon juice

2 cups dried cranberries

Directions

Mix flour, baking powder, soda cranberries and salt in a large bowl.

Mix melted butter, sugar, eggs and lemon juice together.

Combine wet ingredients into dry until thoroughly incorporated.

Chill for at least an hour in the refrigerator.

Shape into small balls and place on a cookie sheet.  Bake in a 350 degree Fahrenheit oven for 10 to 15 minutes or until golden brown.
