Cherry Rounds

Cherry rounds are cherry hand pies. They’re quick and easy to make and great on a picnic or as a snack. For an extra special treat add coconut cream.

INGREDIENTS

4 cups cherries

1 tbsp lemon juice

1/4 cup of your favourite juice

2/3 cup sugar

1/4 cup cornstarch

1/4 cup water

1 1/2 cups flour

1 tsp salt

2 tbsp sugar

1/2 cup vegetable shortening

1/4 cup cold water

Rhubarb Strawberry Pie

Rhubarb Strawberry pie is tangy and delicious. It’s amazing served with coconut cream or by itself on a hot summer’s day. Try the recipe with different kinds of juice to find your preferred taste.

1 vegan or vegetarian pie shell (baked and cooled). Here is one recipe

2 cups orange juice

2 cups strawberries

2 cups of rhubarb

2/3 up sugar

2 tbsp cornstarch

2 tbsp water

Chocolate Raspberry Hand Pies

Chocolate raspberry hand pies are a different take on the hand pie. Chocolate pie dough encapsulates a sweet raspberry filling for a decadent treat. They’re great to take for a mid afternoon snack or a small dessert.

Enjoy!

1/2 lb of vegetable shortening

1/2 tsp salt

2 cups flour

1/2 cup cocoa

one egg

1 tbsp white vinegar

Beat one egg in a measuring cup and add 1 tbsp white vinegar.  Fill with cold water to 1/2 cup. 

Blend flour, vegetable shortening and salt. 

Gradually add liquid to dry ingredients and blend until well incorporated.

Pumpkin Pie

This pumpkin pie recipe is my mother’s and  I can’t count the number of times we’ve baked this pie for Thanksgiving and Christmas.  The custard has the perfect balance of cinnamon and ginger and is fantastic served with vanilla whipped cream or ice cream.

3/4 cup white sugar

1 cup milk

2 eggs beaten

1/2 tsp cinnamon

Cherry Biscuits

Cherry biscuits are a great treat for a mid day snack. The tart cherries work perfectly with the savoury dough. They are wonderful paired with Garlic and Chive Biscuits on a Christmas platter.

INGREDIENTS

3 1/2 cups flour

1 tsp salt

2 tsp baking powder

4 1/2 tsp cream of tartar

1/4 cup cold diced butter

1 1/3 cup almond milk

1 beaten egg

Old Fashioned Apple Pie

I’ve never been a big fan of apple pie until I tried it with tangy spy apples.  The apples are just sour enough to cut the sweetness of the sugar and the fat of the crust.  The recipe would be just as good with granny smith apples.

PIE CRUST

5 cups flour

Apple Pie

3 tbsp brown sugar

2 tsp salt

1 tsp baking powder

1 lb vegetable shortening

1 egg

2 tbsp apple cider vinegar

ice cold water to make 1 cup

FRUIT

1 cup sugar

2 tbsp flour

1 tsp cinnamon

5 cups Spy apples
