Peanut Butter Muffins

These muffins are great for a snack when the kids get home from school.    Bake up a double batch as they’re sure to disappear fast.

Ingredients

1 cup flour

1 cup oat bran

2 tsp baking powder

1/4 tsp baking soda

1 tsp salt

1/3 cup brown sugar

1 tsp dry milk

1 cup almond milk

1/2 cup peanut butter

Chocolate Peanut Butter Clusters

This no-bake cookie has the classic flavors of chocolate and peanut butter.  You only need one of these cookies to satisfy your sweet tooth as the cookies are delightfully sweet.

Ingredients

1/2 cup brown sugar

Chocolate Peanut Butter Clusters1/2 cup corn syrup

1 cup creamy peanut butter

3 cups corn cereal (The flaked kind)

5 squares of baking chocolate melted (I like dark chocolate)

Mix ingredients together in a large bowl until thoroughly combined.  Line a cookie tray with parchment paper and drop mixture by spoonfuls onto parchment.  Chill.  Serve cool.

White Chocolate Peanut Butter Bars

This cookie has a shortbread base topped with peanut butter and chocolate.  These cookies are rich so a small piece is all you need.

Ingredients

1 1/4 cups ground cookie crumbs.  I like ginger.

If you don’t like white chocolate replace the white chocolate chips with milk chocolate chips.

1 1/2 cups chunky walnuts

1/2 cup brown sugar

2/3 cup melted butter

1 egg

2 tsp vanilla

Mix together and press into a parchment paper lined pan.  Bake at 350 degrees for 15 minutes or until edges are dry.  Cool. Continue reading “White Chocolate Peanut Butter Bars”

Peanut Ice Box Cookies

This dough needs to be chilled in the refrigerator before it can be baked.  You can prepare the dough several days in advance of your event.  Simply remove from the refrigerator and bake up a batch while the dough is still chilled.

3/4 cup melted butter

Macadamia nuts may be substituted for peanuts in this recipe.  Add some white chocolate chips to change the recipe even further.

1/2 cup brown sugar

1/2 cup white sugar

1 egg

Blend above ingredients together until smooth.

Orange Mayonnaise Cake

Cake

2 cups flour

1 cup white sugar

1 1/2 tsp baking soda

1/2 tsp salt

1 1/2 tsp baking powder

4 tbsp cocoa

Mix together in a bowl until all ingredients are incorporated.

In a small bowl whisk together:

1 cup mayonnaise

1 cup orange juice

1 tsp orange extract

Mix dry and wet ingredients just until incorporated. Bake in a glass pan at 325 degrees for 45 minutes or until a toothpick comes out clean from the batter.  Cool and then cover with icing.

 

Peanut Butter Orange Icing

6 tbsp crunchy peanut butter

4 tbsp honey

4 tbsp corn syrup

1 tsp orange extract

Mix thoroughly and spread thinly on cake.  The icing is sweet. A little goes a long way.
