Raspberry Chocolate Swirly Cookies

Raspberry and chocolate combine with a luscious shortbread crust in raspberry chocolate swirly cookies.  They’re perfect for a lunch box or for a picnic basket.  Enjoy with milk or tea.

Ingredients

Try white chocolate chips.

2 1/3 cups flour

1/2 tsp salt

1/2 tsp baking powder

1 cup sugar

1 egg

3/4 cup melted better

lemon zest of one lemon

1 tsp vanilla

Molasses Refrigerator Cookies

Molasses Refrigerator Cookies can be kept in the refrigerator for several days until you are ready to bake them.  Serve with a hot cup of tea or coffee.

INGREDIENTS

Blueberry Vanilla Cookies

Dried blueberries are an unexpected treat in Blueberry Vanilla Cookies.  They’re sweet and crunchy and great with iced tea.

Christmas Gingerbread

When December comes I like to pull out recipes that I haven’t used throughout the year.  One of my favourites is the recipe for Christmas Gingerbread.  The combination of spices and sweet molasses is always a crowd-pleaser and kids love the decorated shapes.

1/4 cup sugar

1/4 cup packed brown sugar

3 cups flour

Sugar Cookies

I always make sugar cookies for Christmas.  I have fond memories of rolling dough and cutting intricate shapes. I use this recipe for Easter and Halloween cookies as well simply changing the shapes of the cookies.  They can be decorated intricately if desired but I take the more rustic approach.  I top with coloured sugar, mints, sprinkles or royal icing.

Ingredients

Crystallized Ginger Cookies

This cookie has a bold flavor. The crystallized ginger  spices up the flavor of the molasses and brown sugar. 

If you don’t like crystallized ginger it can be left out easily.  The ginger cookie itself has a good flavor.

Ingredients

3 1/4 cups flour

Cranberry Almond Shortbread

Dried cranberries add a fruity flavour to this shortbread recipe.  The combination of the fruit and the crunch of the almonds  blend well together and make an unforgettable cookie.

INGREDIENTSCranberry ALmond Shortbread

1 tsp vanilla

1/2 cup butter

1/2 cup icing sugar

1 1/4 cups flour

1/2 tsp salt

1/2 cup dried cranberries

1/2 cup chopped almonds

DIRECTIONS

Cream butter, icing sugar and vanilla together.

In a separate bowl mix flour, salt, cranberries and almonds.

Fold dry ingredients into wet until mixed well.  DO NOT OVER MIX.4

Spread cookie dough  on parchment and roll into logs.  I usually make two.  Chill for at least 1 hour.

Bake at 325 degrees Fahrenheit for 30 minutes or until slightly brown.

Lime Cookies

The tang in lime cookies comes from frozen lime concentrate.  Keep a can on hand for when you want a simple and unusual cookie for the kids.

INGREDIENTS

3/4 cup melted butter

lime cookies

1 cup white sugar

1/2 can frozen lime concentrate

1 beaten egg

1 tsp baking soda

1/4 tsp salt

2 cups flour

1 cup pecans

DIRECTIONS

Mix butter, sugar, lime concentrate and beaten egg together.
